When you buy fish, you should know that it is a good thing to consume it in a day or two. Shellfish, like oysters and mussels should be stored in the shell, in a dish that is covered with moistened paper towels or damp towels. Shrimp, squid and shucked shell-fish should be stored in a container or in a leak-proof bag.
In what concerns live lobsters and crabs, you should cook them in the same day you bought them. Then, you can store them in a rigid airtight container and then use them in 2-3 days.

About cooking, you need to know that moderate to high heat is needed and the heat source must be reliable and continuous. You must not interrupt the cooking, so, remember to completely cook the seafood at one time.

In what concerns serving, you should remember never to put seafood back to the plate where the raw product was held.

You must remember that seafood is very perishable, and when you select fresh fish or shellfish for example you should be very attentive. Smelling it can be helpful, and you also should try to find out from where the seafood was captured.
